Modern research shows that resveratrol has multi-functions including theantineoplastic and antioxdant activity. The resveratrol content in polygonum cuspidatum is the highest among all studied plant species according to known papers. Because it has valuable uses in healthcare, medicine and food, its extraction and purification becomes a research focus.Research had been carried out on the technology of extracting Resveratrol assisted by ultrasonic from Polygotnum Cuspidatum.Ethano had been selected from 5 kinds of common solvents to extract Res. Based on the single factor experiments, the extraction conditions had been optimized by orthogonal analysis. The optimum extraction conditions were as follows: the rate of solid to solution is 1:6, the temperature is 70℃, the concentration of ethanol is 60%, extraction time is 20min, pH is 8 and the times of extraction is 1. Under the optimized condition, the yield of Resveratrol were respectively 0.036% .Research had been made on the technology of separating Resveratrol from others matters in the extract of Polygotnum Cuspidatum. The macroporous adsotion resin NK.A-2 had been selected from 8 kinds of carriers by static adsorption and de-adsorption tests. The single factor tests and orthogonal experiments had been applied to optimize the enrichment and separation conditions of Resveratrol . The best absorption conditions were as follows: feeding rate is lm/min, pH value is 7.0 and the concentration of Resveratrol is respectively 2μg/ml. The optimum elution conditions were elution rate 1.5 ml /min and pH value5.0.Resveratrol can be purified and separated by different concentration of allochol, Resveratrol was eluted by 60% allochol. After combine the same components, the products can be obtained by concentration and lyophilization. The content of Resveratrol was respectively 43.60%.The experiment of oxidization of Resveratrol and PPO from potato, the oxidizing activities had been investigated .The results show that Resveratrol can be a substrate of PPO in the potato.
