Ochratoxins constitute a group of toxin metabolites produced mainly by aspergillus and penicillium,and these metabolites have similar structures. there are four ochratoxins named A, B, C, D, and Ocratoxin A(OA)has the most important toxin which is the closest relation to human health. OA can severely contaminate cereals and is the most widely distributed toxin in all kinds of food. Toxicological studies have indicated that OA is a teratogenic, mutagenic and carcinogenic mycotoxin and is strong toxic effect on kidney and liver. OA has been believed to be the second most important mycotoxin after aflatoxins in mycotoxin family. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) and EU member states have studied OA thoroughly. For the purpose of protect the health of national residents, they have surveyed OA contamination level. OA mainly contaminates cereals that are the major food in our country, so OA brings potential harm to the health of consumers. The assessment of dietary intake of OA by the population of China have not been studied, thus we cannot assess the harm of OA to the population of China and take effective measures to protect residents health inour country.
