To solve the problem of the low livability when the Crayfish is after a long-range transportation. In this experiment, mature Crayfish is the research object. The low temperature is anesthetic condition. The purpose is how to reduce the level of metabolism of Crayfish. On the base of analysis the key factors which affect the livability of Crayfish during the actual transportation. Choose the proportion of the Crayfish and the ice in the box, the quantity of water which is underlying the box, the cooling rate and the effect of vibration during transportation as the factors. The results show that:1. MS-222 can not anesthesia the Crayfish. The ether's anesthetic effect is too intense and the survival rate is lower.60mg/L of clove oil anesthesia recovery rate is the best. In the simulated conditions of transport, the survival rate can be increased by 9% than the control group after 20 hours. Put the Crayfish which is anaesthetized by 60mg/L of clove oil into box and cook them after 20 hours. There is no difference of taste compared with the control group.2. By using of single factor and orthogonal test. choose the better transport manner and packing conditions under the temperature of 26~31℃.Put the Crayfish into the 20℃water for 30minutes, after that anaesthetize them with the clove oil at 60mg/L and put them into the box with air holes. The proportion of the Crayfish and the ice is 15 : 1. Sealed ice of plastic bags which can reduce the quantity of water at the bottom and prevent suffocation deaths of Crayfish. Put the 1cm of PU foam under the ice bag for vibration mitigation. Under these conditions, to simulate the transport and the survival of Crayfish is 92.3%.3. Using the optimized conditions for the actual transport. The weight of box and Crayfish is 2±0.1 Kg.60mg/L of clove oil anesthesia recovery rate is the best under a high temperature when the temperature is 26~31℃. After about 1000km transport, the survival rate can be increased by 4.7% than the control group after 3 hours. 40mg/L of clove oil anesthesia recovery rate is better under the temperature about 25℃.
