Hickory nut has high nutritional value,containing many nutrients such as protein, Vitamin A,B,C,E and K,carotene,riboflavin,niacin,calcium,phosphorus,Iron and other trace element.The fat content is between 60%and 70%,and unsaturated fatty acids such as oleic acid and linoleic acid was between 88%and 96%in all fat acids.Because of rich nutritional components,the comprehensive exploration and utilizaiton of hickory are inevitable.The anti-oxidation of hickory nut oil was researched in the experiment.Through evaluating anti-oxidative indices and pharmacologic indices,quantitative analysis was conducted to hickory nut oil.Firstly soxtee extraction method was used to extract oil from hickory nut.During the extraction experiment,orthogonal design was used to analyze all factors which could influence extraction experiment and finally the optimum extration condition was obtained which was n-hexane,60℃and 1:6.5(solid-liquid ratio).During in vitro anti-oxidation experiement,POV,acid value,iodine value,hydroxyl radical-scavenging ability and superoxide radical-scavenging ability of 3 kinds of hickory nut oils were determined to evaluate hickory nut oil anti-oxidative ability and anti-aging ability.After analyzing the result of in vitor anti-oxidation experiment,the hickory nut oil which extracted by n-bexane at 60℃with 1:6.5(solid-liquid ratio) possessed the most excellent quality among 3 kinds of oils,besides that it was concluded from the experiment that anti-oxidation ability was increased with the increase of oil concentrations.In order to examine and evaluate anti-oxidation ability and anti-gaing ability of oil,the best oil mentioned before was chosen to conduct phamacologic experiment.Firstly the aging model of mice was created by injected D-galaetose,then ginsenoside was taken as positive control group to evaluate and compare anti-oxidation abiltiy and anti-aging abiltiy of oil.After continuous intragastrie administrated for successive 42 days, pharmacologic indices such as MAO content,MDA content and SOD acitivity were determined.The pharmacologic result showed that hickory nut oil could inhibit and alleviate mice aging which caused by D-galactose.The oil could increase SOD activity and decline MDA and MAO content which all demonstrated that hickory nut oil could enhance anti-oxidation ability and postpone aging of mice.The result of experiment provided theoretical reference for qualitatively and quantitative evaluating hickory oil and also provided theoretical basis for exploring hickory oil into advanced health oil.More importantly,the experiment laid solid foudation for further study of hickory oil.
