| The technological conditions of Dietary fiber were studied systematically in this dissertation. alfalfa was used as raw material to extract dietary fiber byα-amylase,β-amylase and papain and studies on its physiological character.The technological optimum conditions of Dietary fiber in nutrient alfalfa was extracted by adding 4.0%α-amylase at the conditions of pH6 and 65℃for 60min ,the ratio of material and liquid 1∶1 4 and 0.05%β-amylase at the conditions of pH5.5 and 55℃for 60minand 2.8% papain at the conditions of pH7.5 and 65℃for 60min. respectively.The technological optimum conditions of Dietary fiber in podding alfalfa was extracted by adding 2.0%α-amylase at the conditions of pH6 and 65℃for 60min ,the ratio of material and liquid 1∶1 4 and 0.05%β-amylase at the conditions of pH6.5 and 65℃for 30min and 4.2% papain at the conditions of pH8.5 and 65℃for 60min.The nutrient and podding alfalfa were different in content of chemic component.After enzymic hydrolysis this phenomena obviously minish. The content of soluble Dietary fiber in nutrient alfalfa and extraction rate were high. the content of insoluble Dietary fiber in poddind alfalfa and extraction purity are high.After extracting Dietary fiber, the content of rudimental starch in podding alfalfa is higher than the nutrient ,however the content of rudimental protein in podding alfalfa is lower than the nutrient.it bring falling the purity of insoluble Dietary fiber in nutrient alfalfa.Alfalfa is used as resourceful storeroom of soluble Dietary fiber, the nutrient alfalfa excel the podding alfalfa .
