| The experiment material were Taihang chicken, Ross 308 broiler chicken and Taihang chicken (♀)×Ross 308 broiler(♂) crossing chicken, analysis the chicken meat quality of three varieties which satisfied everyone Nutrient Requirement. Select 60 chickens of one day old of the three varieties, the quantity of the male and the female is equal, raised in routine way, 100 days old of Taihang chicken,56 days old of crossing chicken,42 days old of rose chicken,slaughtered and determined the relevant slaughter performance, conventional muscle quality , conventional muscles quality, the histological structures,the contents of IMP, free amino acid, oryzanin and taurine,and so on. The results shows :1. The whole net thorax percentage, breast muscle rate, lean meat percentage,and abdomen fat rate of Rose cock are extremely significant higher than that of Taihang cock(P<0.01),but leg muscle rate of Rose cock are significant lower than that of Taihang cock(P<0.01), and the Crossing cock betweens them .The DP, whole net thorax percentage, half net thorax percentage, breast muscle rate, muscle rate of Rose hen are significant lower than that of Taihang hen(P<0.01), the Crossing hen betweens them .2.The EE contents of Taihang cock are extremely significant higher than that of Rose cock and Crossing cock(P<0.01).the ash contents of leg muscle of Taihang cock are extremely significant higher than that of Rose cock(P<0.01),but the ash contents of breast muscle are not significant different,the ash of Crossing chicken between of them. The CP contents of breast muscle of Taihang hen and Crossing hen are significant higher than that of Rose hen(P<0.05). The EE contents of muscle of Taihang hen are extremely significant higher than that of Rose hen and Crossing hen(P<0.05)..3.The cooking loss of breast of Taihang cock and Crossing cock are extremely significant lower than that of Rose cock(P<0.01). The cooked meat percentage of breast of Taihang cock are significant higher than that of Rose cock(P<0.05). The pH and cooking loss of leg of Taihang cock and Crossing cock are extremely significant lower than that of Rose cock(P<0.01). The drip loss of leg of Taihang cock are extremely significant higher than that of Rose cock(P<0.01). The pH, water power, cooking loss of breast of Taihang hen are extremely significant lower than that of Rose hen(P<0.01),and the moisture loss are extremely significant higher than that of Rose hen(P<0.01). The drip loss of breast of Taihang hen are extremely significant lower than that of Rose hen(P< 0.01), the Crossing hen betweens them . The cooked meat percentage of breast of Taihang hen are significant higher than that of Rose hen(P<0.05). The pH of leg of Taihang hen and Crossing hen are extremely significant higher than that of Rose hen(P<0.01),and the water power are significant lower than that of Rose hen(P<0.05). The cooking loss leg of Taihang hen are extremely significant lower than that of Crossing hen and Rose hen(P<0.01),and the Crossing hen betweens them . The drip loss of leg of Taihang hen and Crossing hen are extremely significant lower than that of Rose hen(P<0.01).4.The bouillon flavour, bouillon umami taste, juice degree and asticatory of Taihang chicken are extremely significant higher than that of Rose chicken(P<0.01), and the Crossing chicken betweens them .5. The muscle fiber density of Taihang cock are extremely significant higher than that of Rose cock(P<0.01),and muscle fiber diameter and area of muscle fiber are extremely significant lower than that of Rose cock(P<0.01), and the Crossing cock betweens them . Muscle fiber diameter and muscle fiber area of Rose hen are extremely significant higher than that of Taihang hen(P<0.01), and muscle fiber density are extremely significant lower than that of Taihang hen(P<0.01),and the Crossing hen betweens them .6.The IMP contents of breast of Taihang cock and Crossing cock are extremely significant higher than that of Rose cock(P<0.01), the IMP contents of breast are extremely significant higher than that of leg(P<0.01).7.The muscle of Taihang chicken have the highest contents of the total free amino acid. Taihang chicken have the highest contents of Gly,Pro,His,Met,Lle,Leu,Tyr,significant higher than Rose chicken(P<0.05). The contents of Asp of Taihang hen significant higher than that of Rose hen(P<0.05),and other content of amino acid differences are not significant.8.The oryzanin contents of breast of Taihang chicken are extremely significant higher than that of Rose chicken and Crossing chicken(P<0.01). The oryzanin contents of leg of Taihang cock are significant higher than that of Rose cock(P<0.05). The oryzanin contents of leg of Taihang hen are significant higher than that of Crossing hen(P<0.05),and significant higher than that of Rose hen(P<0.01).9.The taurine contents of breast of Taihang cock are significant higher than that of Rose cock(P<0.05), .the taurine contents of leg of Taihang cock are extremely significant higher than that of Rose cock(P<0.01), and the Crossing cock betweens them . The taurine contents of breast of Taihang hen are extremely significant higher than that of Crossing hen and Rose hen(P<0.01).The results shows that: in the condition of different Nutrient Requirement, slaughter performance of Rose chicken and Crossing chicken are extremely higher than that of Taihang chicken. The muscle fiber diameter and muscle fiber area of slow-growing chicken are lower than that of Rose chicken and Crossing chicken,and muscle fiber density are higher than that of Rose chicken and Crossing chicken. Cooking loss and cooked meat percentage of Taihang chicken are higher than that of Rose chicken and Crossing chicken. Taihang chicken has the fastest contents of free amino acid, IMP and oryzanin.The flavor of muscle of Taihang chicken are better than that of Crossing chicken and Rose chicken. |
