The physiological and biochemical index of Corylus avellana L. kernel was studied during harvest, storage, germination and after PEG,NAA,2,4-D treatment .The results were as follows:1.The water and starch content of kernel after harvest were lower than that before harvest. The crude fat, soluble protein, free amino acid, soluble sugar content and vigor of SOD,CAT,POD were higher than that before harvest. The cultivars with steady crude fat content of kernel were 1#,2#,3#,4#and 7#. Before reap, the water content, soluble sugar, starch content of kernel before harvest were higher than Corlus heherphylla F. , while the crude fat, free amino acid, soluble protein content and vigor of amylase, SOD, CAT and POD were lower than Corlus heherphylla F. . After harvest, the free amino acid andβ-Amylase vigor were higher and the water,crude fat, soluble sugar, soluble protein content and vigor ofα-Amylase, SOD, CAT, POD were lower than Corlus heherphylla F. . Before harvest, the content of water, crude fat, soluble sugar were slightly different among each Corylus avellana L. cultivar. However, there was extremely significant difference among cultivars with regard to free amino acid, soluble protein content and amylase, SOD, CAT, POD vigor. After harvest ,the difference of soluble sugar and starch content were significant and difference of soluble protein free amino acid content and vigor of SOD,CAT, POD, amylase were extremely significant. The results of cluster analysis on fat, sugar, starch, protein, amino acid to various hazelnut cultivars showed that 1#,3#,7# and 4# was cultivar that had high content of crude fat and soluble protein and high carbohydrate content before harvest and...
