In this paper, bloated fish was used as materials to produce grass carp tidbit though a series of process such as desalination, drying, cutting, frying and seasoning. According to sterilization technology and anticorrosion technology, the combined treatment was carried out based on ensuring the quality of grass carp tidbit and controlling the total bacterial count under 3×104cfu/g, and the E.coli is negative. Composite proportion of nipagin esters was found to be better antibacterial effect instead of tradition preservative potassium sorbate. At the same time the shelf-lives of the fish tidbit product with different composite bacteriostatic agents were estimated according to accelerated test.Grass carp tidbit was sterilized by microwave-ultraviolet combined treatment. The germicidal efficacies at the different microwave powers, working times, loads, ultraviolet voltages, ultraviolet distances, and ultraviolet working time were analyzed in the single factor experiments.The optimal sterilizing condition was: microwave power 421.4 W, microwave working time 25 s and the ultraviolet voltage 220V.The antibacterial effects of butyl p-Hydroxybenzoate, n-heptyl p-hydroxybenzoate were found to be significant in the studies of signle nipagin esters.In the studies of different concentrations bacteriostatic agents, antibacterial effect of short chain nipagin esters was more susceptible than long chain nipagin esters. In the composite antibacterial effect studies of two or three kinds of nipagin esters, the best bacteriostatic effect was found when the propylparaben, butyl p-Hydroxybenzoate, n-heptyl p -hydroxybenzoate were mixed at 1;1:1 ratio and the mixed concentration was 0.2‰of the fish tidbit.The shelf-lives of grass carp tidbit with composite bacteriostatic agents were measured in the accelerated tests.Based on the aspect of microorganism ,the shelf-lives of three composite bacteriostatic agents were predicted to be 375±4.9,396±8.3,423±6.3 d correspondingly.The shelf-lives were obtained to be 383±7.352,418±8.937,436±8.215 d respectively by measuring the AV and POV of the grass carp tidbit and building regression equation at 25℃.
