Auricularia auricular(L.ex Hook.)Underw.)is known to be a highly nutritious and officinal edible fungus.A.auricular implies the abundant gelatine,having the better pure slippery function to the digestive system,can cleanout cellulose and the canker of food,is the better food for the health of spin,mining and the worker of cut hair.This paper systematically studied that extraction of collagen from A.auricular.The effect of different method extraction collagen from A.auricular for functional characteristic,such as emulsification,and emulsion stability,water absoption,oil absorption,water maintenance.This paper adopted three different methods to extraction collagen from A.auricular.The optimal process and optimal process were ascertained by comparing and analysis.The optimal process on hot water extraction collagen from A.auricular was ascertained by the single factor experiment and the response ichnography design.The optimal purification conditions were that the extraction time was 6.71h,the extraction temperature was 79.04℃,the flesh-water ratio was 41.67,.In these conditions,the experiment rate of collagen from A.auricular was 0.527%.The optimal process on alkali extraction collagen from A.auricular was ascertained by the single factor experiment and the response ichnography design.The optimal purification conditions were that the NaOH concentration was 0.22mol/l,the extraction time was 6.46h,the flesh-water ratio was l:58.82,.In these conditions,the experiment rate of collagen from A.auricular was 0.645%.The optimal process on enzyme extraction collagen from A.auricular was ascertained by the single factor experiment and the response ichnography design.The optimal purification conditions were that the enzyme dosage was 7.32%,the extraction time was 2.66h,the flesh-water ratio was 52.63,.In these conditions,the experiment rate of collagen from A.auricular was 0.287%.This thesis adopted three different methods to extraction collagen from A. auricular,the best method is alkali extraction,is better for the hot water extraction and enzyme extraction.In the paper,the firmer,thicker the consistency,cohesiveness,emulsification stability of the collagen of hot-water extraction from A.auricular is higher obvious.The emulsification, oil absorption of the collagen of alkali extraction from A.auricular is higher obvious.The cohesive,water absorption,water maintenance of the collagen of enzyme extraction from A. auricular is higher obvious.These will lay a foundation for the collagen from A.auricular in food field,health and cosmetic,and so on.
