Renin-angiotensin system(RAS) plays an important role in the regulation of peripheric blood pressure,where angiotensin converting enzyme(ACE) is considered to be the core of the system.ACE plays a key role in increasing the blood pressure by catalyzing the formation of the potent vasopressor angiotensinⅡ(AngⅡ) from angiotensinⅠ(AngⅠ).ACEIPs show ACE inhibitory activity and then regulate the blood pressure by inhibiting the formation of AngⅡ.Nowdays,ACEIPs are widely used in the therapy of hypertension.However,for the side effects of such medicines, food protein-derived ACEIPs,known as angiotensin converting enzyme inhibitory peptides(ACEIPs),which are considered as safer and more natural,have received great interests in the therapy of hypertension.In this study,ACEIPs are produced by fermentation with Lactobacillus helvetic -us TS25,and are detected the active of ACEIPs in vivio and vitro.The fermentation of Lactobacillus helveticus TS25 was studied by orthogonal experiment in this paper. The purpose was to enhance the proteinase activity of Lactobacillus helveticus TS25. The results showed that the improved formulation of fermentative condition,and the optimal culture temperature,the optimal initial pH,the quantity of inoculation,the optimal culture time and the volumes of medium were determined as.35℃,6.5,2.0%, 16h,150ml/250ml respectively.The free amino acid content reached 9.94×10-5mol/L and enzyme activity reached 62.740U.The IC50 of fermented product is 16.65μg/ml. The result of T-test of matched group and medication administration team interherd difference is p=0.034,therefore,it can be included that there is significant disparity in this and there is significant effect in controlling SHR's blood pressure by ACEIP...
