Shisandra chinensis (Turcz.)Baill has extremely high medicinal and nutritional value, it is one kind new functionality health foods of the medicine food homology. There is protein 1.1%, the fat 0.9% reducing sugar 10.9%, total anthocyanin 0.2% in Shisandra chinensis fresh fruit ; there is attar ,lignan 8%,sterin 0.1%, free fatty acids in seed oil of the Shisandra chinensis Baill. Majority of attar is terpene ingredient, and there are the minority oxygen ingredient of the aldehyde,the ketone,the achol ,the acid, the ester ,et al. The Shisandra chinensis main effective component is the lignans compounds including Schisandrin Schisadrol Deoxyschisandrin γ-Schisandrin Pseudo-y-Schisandrin Schisantherin A Schisantherin B C D E Schisadrol A B et al. These has many kinds of effects of antibacterial ,anti- oxidation , anti- senility, guarantees the liver to protect the heart, the suppression central nervous system and so on .The food corrupt deterioration not only can cause food to lose the nutritional value, but also can create food poisoning. The food corrupt reason including four aspects factors of physics, chemistry, the enzyme, the microorganism . Microorganism function is most serious. Added antirot substance and antistaling agent is one of important method that lengthens one of food preservation time. Because of its easy to use, is effective but is used generally. In recent years, along with the people living standard and the health care consciousness unceasing enhancement, the safety food of the natural, the green, the pollution-free is received the general consumers' welcome increasingly. Broad-spectrum , high perfor-mance, hyp-toxicant (or asepsis) , multifunctional antistaling agent becomes the mainstream of current natural food antistaling agent, its demand rapid increase Broad Band.This paper studied the technology condition of extracting schisandra lignose by supercritical CO2 extraction, ethanol extraction, water extraction and so on. And studied bacteriostasis andminimum bacteriostasis consistency of these extracts. The result showed as follows:1. The optimal conditions of extraction of lignans by supercritical CO2 extraction from fruits of Schisandra chinensis are as follows: 0.245-0.198mm as the diameter of raw material, 300g/pot as inventory rating,30Mpa as extracting pressure, 45℃ as extracting temperature, 120min as extracting time, 15L/h as CO2 flow rate. The extraction rate of lignans from Schinensis by using supercritical CO2 extraction is 1.024 %,and discharge port rate is 28.99 %.2.
