Phosphatidylcholine(PC) is commonly considered as one of the most important lecithin in biological activities and has main function in nutrition and health. Phosphatidylcholine, which is composed of fatty acid, choline, glyceryl and phosphoryl group, provides phosphorus for body growing, and is the main source of choline and essential fatty acid, thereinto, choline is essential to the growth of man's cerebra and keeps it work naturally; it has good emulsification as a typical compound bearing hydrophile and oleophile, for the existence of fatty acid and phosphoryl group. Therefor, phosphatidylcholine has many functions in medical use, such as improving the activity of cells in man's cerebra, building up memory, keeping young, defending aged dementia and cardiovascular disease, protecting liver, avoiding fatty liver and hepatocirrhosis, and so on. In addition, it also has wide applications in chemical industry, light industry and food production.In this article, soybean liquid lecithin has been used as material for the purification of PC, including solvent method, SFE-CO2 extraction, column chromatography, which provided base for manufacture. And methods of HPLC and TLC have been researched for the determination of PC. To the purified product, purity and spectral character was analysed, and fatty acid has been determined so as to confirm classes of PC. The main studies and the results were showed as follows:1 .PC has been extracted all by solvent. Firstly, acetone was used to remove fatty acid and dirties in material, optimal extracting times was 3-4 in room temperature, and light yellow powder lecithin was obtained. Secondly, through uniform design, factors of extracting temperature, extracting time, alcohol content and ratio of solvent to material have been considered to the purification of alcohol with the phosphorus content determined by UV-VIS as the evaluating target, and it showed that alcohol content had significant influence on extraction, the best condition was 1:8 of 100% alcohol solution to the sample weight ratio, and extracting in 50 °C water bath for 25 min.
