There are many hazard factors of Aquatic Product such as chemical factors food additives,metals,residual of pesticide and medicine and biology factors microorganism and parasite .This essay researches additives and parasite, furthermore, it prospect controlling technology. As for the additives, this essay researches sulphite,alum and polyphosphates. Sulphite is most often used in food industry as anti-oxidizing and keep fresh agent,it is greatly used in Roasted Fish Fillet,Roasted Prawn,Raw Crabmeat,Fish Filling etc in recent years. However, people know little about its using status and the residual. This paper discusses food safety of sulphite, assesses the determination of sulphite in Aquatic Product and monitors the residual of sulphite in Aquatic Product samples hard upon 100. Recovery of Pararosaniline Hydrochloride demonstrates: recover of Roasted Fish Fillet is all within 97.5%~109.4%, Frozen Shrimp is between 115.3%~121.6% and Fish Filling is 90.9%~119%.The uncertainty displays that the standard uncertainty of Pararosaniline Hydrochloride is 0.141, it's relative uncertainty is 0.333 if concluding factor equals 2.36 under the 95% trusting probability. Alum is greatly used in traditional food such as Salted Jellyfish and Salted Jellyfish Head. However, with the emerging of conception of "alum toxicity", people pay more attention to the residual of alum in Salted Jellyfish and Salted Jellyfish Head. However, people know little about this. The paper studies the method of determination of alum in SC/T 3211-2001, examines the alum content in all Salted Jellyfish and Salted Jellyfish Head that can be collected in Qingdao from April 14,2004 to June 15,2004. Research of determination alum tells us: the amount of EDTA solution must be enough, or else, the result will be lower than its true value. The data of monitoring alum content reveal that most samples are between 0.2%~1.5%,pass rate is over 95%. Parasite is another hazard factors of Aquatic Product. There is no paper researching systemically about parasite in Aquatic Product in our country. This paper points out that there are three kinds of Parasite in Aquatic Product: Nematodes, Chlonorchis sinensis and Diphyllobothrium latum. The paper discusses the infected kinds of fish,parasitic place and the style of infecting human about these three parasites, furthermore, it invests the situation of infecting status among the common economic fishes. The following is the experiment result. The most terrible parasite is Nematodes. The invest of 15 kinds of fish and total 95 item tells us that Paci--fic Fluke,Andersson's sickh-ead,Black sea brea-m ,Red sea brea-m and Spanish mackerel infected Nematodes serious. Paci--fic Fluke,Andersson's sickh-ead,Black sea brea-m and Red sea brea-m are all infected, people should consume them cautiously; The infected rate of Spanish mackerel is between 85% and 92%, infected intensity is 47.6. About the Chlonorchis sinensis and Diphyllobothrium latum, through the research of Common carp,Grass carp,Crucian carp,Freshwater shrimps and Chinese mitten crab, we come to a conclusion that the infected rate in Qingdao is zero and it also tells us that the infected situation are different among different freshwater product . About the controlling technology prospect, we establish common mode about the given product using HACCP and we hope that will be helpful to Aquatic Product factory.
