Capsanthin is not only fresh in color and luster, but is also safe for use. Recently with increased danger of synthetic pigment use, the security and nutrition value of natural pigment make it one of the most important products that is used in the food and cosmetic fields. Capsaicin is one of the most important curatorial raw materials. It is also being used wildly in fields. So it should have bright future for us to study the extraction of capsanthin and capsaicin from hot red peppers.A kind of organic solvent and operation process were ascertained by experiments to extract capsanthin. Then, two kinds of extraction technology were ascertained: acetone extraction technology by soxhlet and ethanol extraction technology by supersonic wave. The optimum extraction condition of soxhlet was dertermined as follows . Five grams paprika need 150mL acetone and 4 hours time under 65 ℃ .The latter was dertermined by uniform design method as follows.
