Tea polyphenols (TP), is a new pure natural anticancer and antioxidant. It has great economic profit to study TP for its widespread application in foodstuff industry and daily chemical industry and so on.We study the separation of TP, the relationship between structures and antioxidation activities of TP and TP-metal from single molecule to whole substance, build theory basis for better application. Work have been processed in some facets as followed.(1)The green technological process of separation of TP have been found out. Methods to separate TP with Polyamide or silica gel as stationary phase, carbinol or acetone as mobile phase are used in forepart . In this paper, we use carbinol , ethanol or acetone as mobile phase to compare the separation effect of TP in order to find a less poison mobile phase.(2) The relationship between the structures and antioxidation activities of catechins are studied by the calculation of quantum chemistry. AM1,HF are usually used in studying polyphenols in litetature. They are simpleness. So we use HF/6-31G* and B3LYP/6-31G* to explain the structural characteristics of catechins. We find the calculation result of DFT is better than of HF and the activity order of the four monomer, sufficient explain and build a more precise pattern to study the relationship between the structures and antioxidation activities of catechins which have theory guidance signification to choice the natural antioxidation matter.(3)The stable form and the relationship between the structures and antioxidation activities of catechin-silver are studied by the calculation of quantum chemistry. At present, research about the chemist and biological activities of TP have been done systematically and deeply. But studies on TP-metal have been just carried out. Very few studies onthe relationship between the structures and activities of TP-metal have been reported. In this paper, the reaction of TP and silver or zinc have been studied.We forecast that whether catechin can react to silver in quanta chemistry methods, find out stabilization structure which guide thesynthesis of TP-metal in experiment, explain and build the mode to study the relationship between the structures and antioxidation activities ofcatechin-silver.(4)Through synthesizing TP-metal compound in the base of theory forecast and analysising its structure, we know it may be has the character of antioxidation. The synthesize route is simple , less time to guide the production in factory.(5)Better antioxidation of TP-metal compounds have been tested than of TP by the antioxidation experiment between TP and TP-metal, which give theory base in exploitation the medicine value of TP.In general, in this thesis, a green way to separate EGCG by using economic and less poison wash solution has been built. The separation technology which has industrialization foreground. Build a more precise pattern to study the relationship between the structures and antioxidation activities of catechins which have theory guidance signification to choice the natural antioxidation matter. We has synthesized TP-metal compound. The synthesize route is simple, less time to guide the production in factory. It was made clear that the antioxidation of TP-metal compound is quite satisfactory, which may be theoretically and practically significant in more comprehensively andefficiently utilizing this natural products in food and oil industries.
