Five local varieties of arbutus from yuyao city Zhejiang province was selected as raw material in this study to investigate the primary physicochemical index, and the antioxidant activity of them.The content of total anthocyanin(TAcy), total flavonoids (TF) and total phenols(TP) of arbutus juices were measured by spectrophotometry. Obvious difference was found in these arbutus: biqi has the highest content at 7.84mg/100ml TAcy, andfenhong has the lowest content at 2.12mg/100ml TAcy . biqi has the highest content at 4.1mg/100ml TF, andfenhong is the lowest one at l.Smg/100ml TF. Chida has the highest content at 18.4mg/ml TF, and fenhong and hunan are both the lowest content at 12.45mg/ml TF.Citric acid solution were added to the ascorbic acid-Cu2+-H2O2-yeast chemiluminescent system to study the peak value of CL. The result showed that acidity has great effect on the CL of ascorbic acid-Cu2+-H2O2-yeast chemiluminescent system. When the concentration of Citric acid solution is 0.6%, peak value of CL was depressed evidently. Inhibitory rate reached 84.7%. When the concentration of Citric acid solution is less than 0.3%, the CL can keep a steady level and intensity. When acid sample were examined in this system , the blank control should be set based on the acid of sample.Arbutus juices were diluted by ultra pure water to 10 multiple. 0.15% citric acid solution as blank control. The result showed that all the five varieties of arbutus juices have the scavenge activity to OH. The scavenge ability order is :chida> biqi >fenghuan > hunan > fenhong.We have optimized the pyrogallol-luminol (PL) system for the determination of luminescence. The appropriate buffer solution is NaCOs-NaHCOs (pH 10.2),appropriate concentration of pyrogallol is 0.625mmol/L. The result showed that all the five varieties of arbutus juices have the scavenge activity to O2. The scavenge ability order is :chida> biqi >fenghuan > hunan > fenhong.From the results ,we can see that, chida has the highest content of TP, it's scavenging activity to OH and O2 is the best. Fenhong has the lowest content of TP, it's scavenging activity to OH and O2 is the worst. The TP content in arbutus is corresponding with the scavenging activity to OH and O2. It is suggested that TP is the key ingredient of arbutus to scavenge active oxygen free radical.Biqi arbutus juice was heated in boiling water bath, with the extend of the time , anthocyanins in the juice is decreased, and the scavenging activity to O2 is decreased,too. It is suggested that he scavenging activity of biqi arbutus juice is connected with the anthocyanins content.Effect of arbutus juice on lipid auto-oxidization was studied here. The results showed that 0.02% arbutus juice have antioxidant activity in oven-storage experiment. Hunan is the best in this system .
