This paper is one part of projectr "A study of the htunidcool system in thepreservation of Fruits &Vegetables which is included in the "97 National sciencecommittee torch plan ". On the basic of the research home &abroad achievements,the studies on the establishmeni of ozone operate rules, on the functions of ozone inhumidcool system and on the physiological characteristics of litchi. longan. Averrhoacarambola. mango\ spinach and other fruits stored in the lHumidcool System werecarried ollt. Besides, the works includes the physiological characteristics of fruits&vegetables stored in the humidcool system and the test of free-burden.The results show that the sterilization effects toproduce pretfeated by ozone or byozonized water are obvious and the mould on the fruits & vegetables is wellcontrolled, treatment of ozone and ozonized water can diminish the enzymelivingness \ protecting colors and used to precool fruits &vegetables, The notritionand quality and nice flavor produce in the Humidcool system with the condition oflow temperature and high relative humidity are retained better, The development ofthe prOject will give the basis for the popularization & aPplication of the humidcoolsystem.
