In this paper, the synthesis of nitrosohemeglobin from nitric oxide and hemoglobin and its properties were studied. In the part of synthesis of nitrosohemeglobin from sodium nitrite, sodium nitrite and hemoglobin as materials, optimum using amount was 100 mg/kg, ascorbic acid 120mg. Nitrosohemeglobin can be gotten. In the part of synthesis of nitrosohemeglobin from nitric oxide, the pigment was gotten by using self-making nitric oxide and hemoglobin. The controllable reaction of the pigment synthesis was gotten with commercial nitric oxide also. The optimun pH of nitrosohemoglobin synthesis was pH 5.99?.1. The speed of most suitable homogenizer was 9000 r/min. Ascorbic acid can be used in conditoining pH value. The time of the reaction was about 4 mm. The iron concentration in the spray dried unencapsulated nitrosohernoglobin sample was 3000 mg/kg. The contant of the nitrosohemoglobin in the pigment powder was about 86.1 8%. Absorption spectrom of the pigment extracted by 80% aqueous acetone and the liquid pigment are the same as dinitrosyl ferrohemochrome (DNFH) reported from literature, which indicated that the structure of them were similar. In the part of rnicroencapsulation spray drying of nitrosohemoglobin, wall materials were B-cyclodextrin, modified starch (N-LOK). First the encapsulating agents and the pigment were mixed at 6000 r/min with homogenizer, and then spraying the sample, the powder of the pigment was gotten. From scanning electron mincroscope(SEM) and particle size analyzer, it is found that the mean size of the pigment particle is about 10.17 ~t m,the size of the whole particles were normally distributed. There was no property of inducing sudden mutatent. The pigment belongs in practical no harmful food additive. In the part of basic properties of the nitrosohemoglobin pigment, the pigment has some capacity of antioxidation of fat. Solubility of the pigment was about 96.6% in the solution of 0.O4mol sodium carbonate, cooperated magnetic stir, which is beneficial to industrial production. Either liquid pigment or encapsulated pigment showed better colouring efficiency.
