Phytosterol was the main natural active constituents in the rhizome of Begonia sinensis A.D.C.,which it has a high value in food and medicine industries.Extraction technology, separation and purification of phytosterol from the rhizome of Begonia sinensis A.D.C.had been investigated in this study. The use of P-cyclodextrin as a wall material for encapsulation ofβ-Sitosterol was also done in this paper.By optimization of single factor and rotating orthogonal experiment, ultrasonic technology was applied to extract sterol, the optimal technological conditions were as follows:material fluid ratio was 1:24, extracting temperature was 58℃,extracting time was 57min, and under these conditions,the sterol content from rhizome of Begonia sinensis A.D.C.was found to be 1.80mg/g. The analysis of high-performance liquid chromatography spectrum revealed that the sterol content from rhizome of Begonia sinensis A.D.C. was found to be 1.35mg/g.Sterols were isolated and purified in order to evaluate the adsorption rate index using silica gel, the orthogonal test results showed that the optimum conditions of silica static adsorption were as follows:adsorption time was 2.5h, adsorption temperature was 35℃, adsorption concentration was 0.4mg/mL,elution agent for the petroleum ether:ethyl acetate=10:1,in which conditions, the adsorption rate was found to be 85.88%.By UV, infrared and high-performance liquid chromatography qualitative analysis found that after the separation and purification of phytosterols it has a characteristic peaks and less interference components, which indicate that purification had good effect.P-cyclodextrin was used as a wall material, because it posses numerous biological functions such as antioxidation; to prepare sterols micro-capsules, and compare it with the different anti-oxidants micro-encapsulation of sterols before and after encapsulation had been studied, orthogonal study for following conditions added water 60mL, mixing temperature of 50℃,stirring time 50min, sterol (mL):P-cyclodextrin (g)=1:10 (V:m) had been carried out.The results showed that sterol microencapsulation had an embedding rate of 87.98%, microcapsuls had a strong antioxidant capacity in comparison to vitamin E, P-Sitosterol as sterol concentration increased, antioxidant capacity enhancement.Begonia roots as the main raw material, supplemented by Codonopsis, Chinese angelica, and dates as auxiliary materials, were dipped in Fen-flavor liquor (used as base liquor and it was produced by pure sorghum) in order to produce Liquor as follow:400g Chinese Begonia rhizome slices along with the 2L65% white wine were added to the container, using the cold soak method at room temperature for one month, within stirring two times everyday, stirring one time weakly; it was found that joining of 1% of the egg white solution to cold treatment, had a better effect than the gelatin solution and gelatin-egg white in clarification of medicated wine.
